"Don't miss the Fanesca!" we were told. This is a soup that is served only for a few days before Easter Sunday. It is made with 12 types of legumes and grains, representing the disciples of Christ, in a base of salt cod cooked in milk. We found it at Cafe Austria where the chef is a native Cuencan. It was delicious.
